LAMB LEG STEAKS WITH HERB & PAPRIKA RUB

  • 2 x 150g lean boneless lamb leg steaks

  • 15ml/1tbsp dried thyme

  • 15ml/1tbsp dried basil leaves

  • 15ml/1tbsp dried parsley flakes

  • 10ml/2 teaspoons smoked paprika

  • salt and freshly milled black pepper

COOKING DIRECTIONS

Place the ingredients for the rub on a shallow plate and mix well. Coat the steaks with the rub on both sides and cook on a prepared barbeque or under a preheated moderate grill for 6 – 8 mins each side or until the meat juices run clear.

Serve with potato wedges and a green salad.

ABOUT THIS CUT

Leg steaks come from the leaner part of the leg and can be either ‘bone in’ or boneless. They are best grilled, griddled, pan-fried or sautéed. They are also great cooked on the barbeque.
