GRILLED PORK CHOPS

WITH BASIL-GARLIC RUB

  • 4 x bone-in pork loin chops

  • 2 x garlic cloves (peeled)

  • 1 x bunch of fresh basil

  • 2 tbls of lemon juice

  • 2 tbls of olive oil

  • 1 tsp of sea salt

  • 1/2 tsp of freshly ground pepper

COOKING DIRECTIONS

With machine running, drop the garlic into a food processor to mince, stop and add the basil, lemon juice, oil salt and pepper, process to make a thin wet rub.

Spread both sides of the chops with the rub, and let stand for 10 mins.

Heat the grill to med hot, and cook the chops for 20-25 mins turning occasionally.

Top the chops with shaved Parmesan, and serve with new potatoes and asparagus.
